Is there a recipe?
I absolutely faked this one. I had store-bought pesto with chicken left over from the night before (I added more basil, olive oil, and parmesan—I didn’t have any pine nuts on hand). So this wasn’t pesto-heavy as I was really craving some sort of light vinaigrette. I think that night I made an impromptu olive oil-red wine vinegar-“herbs”-salt-splash of balsalmic-tiny bit of mustard dressing. The biggie was using that Veggetti thing on the zucchini! It made for a really healthy and very light dinner on a hot day. Even the kids loved it.
The grape tomatoes didn’t hurt either.
