So we’re living with our current house guest, Irene, and so far she’s only JUST started to be noisy. As a preemptive food strike, I started making a stunning shepherd’s pie from the best recipe EVER! I think I’ve written about it before but it bears repeating.
Kell’s Pub in Portland makes this and has generously put the stunningly tasty recipe online for free (http://www.recipegoldmine.com/cck/kells_shepherds_pie.html)…which just makes me love them more. For the rest of my life, if I’m ever lucky enough to be in Portland I will always eat there to support them.
For the gluten-challenged the only change is to make the roux with rice flour or an all-purpose GF flour. I had King Arthur on hand. Done and done!
So right now the wind and water are banging on the windows and the roof and the whole house smells like shepherd’s pie with champs ulster topping in my favorite Dutch oven.
There are worse things.
